Menu for the gala dinner

2021 Annual University Celebration Menu

This year, we have sought to use the entire produce to avoid food waste.


  • Fish ‘n’ chips: cod breaded in rye bread crumbs
  • Rye bread served with beetroot tartare, confit de canard and apple
  • Polenta served with pickled mushrooms, thyme, horseradish and tomato


  • Leek and bacon chunks served with smoked cheese from Funen
  • Celery sticks
  • Quinoa salad with cucumber, pickled red onions, parsley, cranberry and buckwheat
  • Falafel served with tahini cream sauce, humus and pickled chillies


  • Cheese from the marshland served with stewed apples and crispbread
  • Macaroons
  • Apple surprise with salty caramel in a shortcrust pastry
  • Orange mousse

Served with bread and creamed butter
½ bottle of white or red wine & 1 bottle of spring water

Beer and soft drinks are sold separately
